Starbuck’s Inspired Instant Pot Egg Bites

These are the perfect grab and go healthy breakfast. My boys love them and they can be loaded with hidden veggies (always a HUGE PLUS considering my boys despise anything green). If you love Starbucks egg bites, then this is the perfect recipe for you. Feel free to play around with the ingredients - substitute bacon for ham or turkey, onion for spinach or roasted red peppers, cheddar cheese for Monterey Jack, etc..

Ingredients
  

  • 4 Qty Eggs
  • 1/2 Cup Cheddar Cheese
  • 1/2 Cup Cottage Cheese
  • 1/4 Cup Bacon
  • 1/4 Cup Chopped Yellow Onion About 1/3 of a small yellow onion
  • 1/4 Cup Chopped Spinach (optional) For added nutrition I use chopped frozen spinach
  • 1 pinch salt
  • 1 pinch pepper

  • This recipe requires at least a 6-quart Instant Pot to make these Egg Bites. I use the silicone molds listed below for the InstaPot (I stack them in the Instant Pot if I decide to double the recipe) Be sure to cover your mold with aluminum foil or with one of these silicone lids (otherwise water will get in the egg bites). Setting the Instant Pot to STEAM for 10 minutes resulted in egg bites that were perfectly cooked. Note that it will take about 5 minutes for the pressure to build, and then the countdown timer will begin. After the time is up, I let the pressure release naturally for 10 minutes before removing the egg bites from the Instant Pot. So, you’re looking at just under a half hour from start to finish for this recipe.

Notes

  2. Add eggs, cheddar cheese, cottage cheese, salt and pepper to a blender and process until smooth (about 30 seconds). Add yellow onion, spinach (optional) and bacon and quickly pulse once to combine.  (if you like your onions finer, throw them in the blender with the cheeses).

  4. Pour the egg mixture evenly between the compartments of the silicone mold, tightly cover with aluminum foil. (don't fill to the top, these will rise slightly)
  5. Lower the silicone mold into the Instant Pot, placing on top the trivet that came with the Instant Pot.
  6. Place the lid on the Instant Pot and seal the vent. Press the STEAM button and set the timer to 10 minutes (10 minutes should automatically come up). It will take about 5 minutes for the Instant Pot to come to full pressure.
  7. Once the time is up, allow the pressure to release naturally for 10 minutes, and then release any remaining pressure before opening the Instant Pot.
  8. Remove the silicone molds from the Instant Pot and allow the egg bites to cool before taking out of the molds.  (I use a butter knife to trace the molds so that the egg bites easily pop out).
